Hello guys,
I saw an advertisement from Olive
Garden that mentioned that tomorrow is the National Stuffed Mushrooms Day!!.. and because I probably won’t be able to go to their restaurant any time soon, I decided to
make them at home. SUPER DELICIOUS! So
good that you can't stop eating them! Ask my friend Yaneth and she will confirm it! ;) Also, I
used a couple of leftovers for this recipe.
You will need:
20 Baby mushrooms (caps only)
1 cup fresh spinach (chopped)
¼ cup parmesan cheese (shredded)
½ cup queso fresco (shredded)
6 cherry tomatoes (cut in half and those halves
cut in 4 pieces for a total of 8 small pieces per tomato)
2 full spoons of previously made pesto
½ cup seasoned soy meat (previously made)
A drizzle of
extra virgin olive oil
Adobo
Garlic Powder
Dried parsley
Italian Style bread crumbs
Directions:
Preheat your oven to 350 degrees. Chop 5 baby mushrooms in small pieces and put
the other 15 to the side. In a medium size bowl add the chopped mushrooms and mix
in the remaining of the ingredients except for the bread crumbs. Prepare the baking sheet and place the
caps. Start stuffing the caps and top
them with the breadcrumbs. Bake for 30-35 minutes. Serve and garnish with
parsley.

Vi en un
anuncio del restaurante Olive Garden que mañana es el Día Nacional de las Setas
Rellenas y como no creo que pueda ir a uno de sus restaurantes decidí hacer mi
propia receta. Ya la había hecho
anteriormente pero esta vez le anadi mas ingredientes y diferentes. Ademas utilice varios ingredientes
que ya tenia preparados en la nevera.
Necesitaras:
20 setas pequeñas (sin
tallo)
1 taza espinaca fresca
(cortar en pedacitos pequeños)
¼ taza queso parmesano
en polvo
½ taza queso fresco
rallado
6 tomatitos pequeños
(cortarlos por la mitad y ambas mitades en 4 pedazos para un total de 8 por
tomate)
2 cdas pesto (hecho en
casa)
½ taza carne de soya
previamente sazonada
Aceite de oliva extra
virgen
Adobo
Ajo en polvo
Perejil seco
Italian Style bread
crumbs (pan rallado con especias italianas)
Como hacer:
Precaliente
el horno a 350 grados. Cortar 5 setas en
pequeños pedazos y dejar las otras 15 a un lado. En un recipiente mediano mezclar el restante
de ingredientes excepto los bread crumbs.
Prepara el molde para hornear y coloca las setas/hongos. Comienza a
rellenar las setas y añade con una cucharita los bread crumbs encima de cada
una. Hornear por 30-35 minutos. Sirve y adorna con una hojita de perejil.
