Hello my beautiful readers,
At first, I asked myself; “is it worth to spend the time to make my own marinara sauce when the ones in the store
are good”? Now, I think it is TOTALLY
worth it! I get to add the ingredients I
like the most and it came out delicious!! But most importantly it is easy,
nothing complicated.
You will need:
1/5 cup extra virgin olive oil
1 yellow onion, chopped
7 cloves garlic, chopped
2 stalks celery, chopped
2 medium carrots, peeled and chopped
1 can crushed tomatoes
1 can whole tomatoes
1 dried bayleaf
Salt (Kosher) and black pepper to taste
Adobo seasoning (if desired)
Fresh parsley
Directions:
In a large pot, heat the oil over medium heat. Add the onions with a pinch of salt and sauté
until soft and translucent. Add the garlic, celery and carrots and sauté for
about 8-10 minutes. Reduce the heat to
medium-low and add the tomatoes, bay leaf and parsley. Partially cover the pot and cook, stirring occasionally,
until the vegetables are soft and completely cooked through for about 1 to
1/2hrs. Let the sauce cool slightly. In a food processor blend the sauce until
smooth. Let it cool completely, cover and refrigerate overnight. The next day, remove the lid and bring the
sauce to a slow simmer until you are ready to serve.
